SALAD DRESSINGS -- Continued

Russian Dressing

1 green pepper
1 tablespoonful capers
1 pimiento
½ can caviar
1 dill pickle
¾ -qt. mayonnaise
6 sweet gherkins

Mix together and season with juice of 1 lemon, salt and black pepper.

Cream Fruit Dressing
(One quart)

1 pint mayonnaise
2 tablespoonfuls powdered sugar
2 cups whipped cream
2 teaspoonfuls tarragon vinegar

Roquefort Cheese Dressing
(One quart)

¾ qt. mayonnaise
2 tablespoonfuls tarragon vinegar
¼ lb. Roquefort cheese
3 or 4 drops Tabasco sauce
1 tablespoonful Worcestershire sauce

For Mayonnaise -- The white of an egg, stiffly beaten, added to the mayonnaise salad dressing, makes it much more delicious.

Parisian Dressing
(Good for vegetable salads)

Chop very fine, 1 green pepper, 1 white onion, 2 red pimientos, 1 dill pickle, 2 sprigs parsley. Add this to 1 cupful olive oil, one-fourth cupful vinegar. Season with 1 teaspoonful powdered sugar, salt and pepper to taste.

Celery stuffing-- Peanut butter makes a very good stuffing for celery, particularly if you work it up with a little salad dressing. Roquefort cheese is even better.
